Watermelon and Feta Salad
Ingredients

- • 150 g feta cheese, crumbled
- • 15 g fresh mint leaves, torn
- • 50 g red onion, thinly sliced
- • 30 ml extra virgin olive oil
- • 15 ml fresh lime juice
- • 1 sprinkle black pepper to taste

Cut the watermelon into 1-inch cubes, removing any seeds if present. Pat dry gently with paper towels to remove excess moisture.

If using a whole red onion, slice it very thinly into half-moons. For a milder flavor, soak the sliced onion in cold water for 5 minutes, then drain and pat dry.

In a large serving bowl, gently combine the watermelon cubes, crumbled feta cheese, torn mint leaves, and sliced red onion.

In a small bowl, whisk together the olive oil and fresh lime juice until emulsified.
