Ingredients

  • 900 g russet potatoes
  • 1 L vegetable oil for frying
  • 225 g bacon
  • 200 g shredded cheddar cheese
  • 100 g shredded monterey jack cheese
  • 120 ml sour cream
  • 4 item green onions
  • 2 item jalapeño peppers
  • 1 sprinkle salt to taste
  • 1 sprinkle black pepper to taste
  • 5 ml paprika
  • 5 ml garlic powder

Instructions

    Cut potatoes into 1/2-inch thick fries, leaving skin on. Soak in cold water for 30 minutes, then drain and pat completely dry.

    Heat oil in a heavy pot or deep fryer to 325°F (163°C). Fry potatoes in batches for 3-4 minutes until tender but not browned. Remove and drain on paper towels.

    While fries cool, cook bacon until crispy. Crumble into bite-sized pieces and set aside. Slice green onions and jalapeños thinly.

    Increase oil temperature to 375°F (190°C). Fry potatoes again in batches for 2-3 minutes until golden brown and crispy. Drain on paper towels.

    Season hot fries immediately with salt, pepper, paprika, and garlic powder, tossing to coat evenly.

    Transfer fries to a large oven-safe platter or baking sheet. Top with both cheeses and place under broiler for 2-3 minutes until melted.

    Remove from oven and immediately top with crumbled bacon, jalapeños, and green onions.

    Serve hot with sour cream on the side or drizzled on top. Add any additional toppings as desired.
