Bacon-Wrapped Dates

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Make a lengthwise slit in each date and carefully remove the pit. Be gentle to keep the date intact.

Stuff each pitted date with about 1/2 teaspoon of goat cheese, pressing gently to close the date around the filling.

Cut each bacon strip in half crosswise so you have 24 half-strips total.

Wrap one half-strip of bacon around each stuffed date, starting at one end and spiraling around. Secure with a toothpick through the center.

Arrange the bacon-wrapped dates on the prepared baking sheet with the bacon seam-side down, spacing them about 1 inch apart.

Sprinkle lightly with black pepper if desired.

Bake for 18-20 minutes, flipping halfway through, until the bacon is crispy and golden brown on all sides.

Remove from oven and let cool for 3-5 minutes on the baking sheet before transferring to a serving platter.
