Cob Loaf Dip
Ingredients
- • 1 item round cob loaf
- • 250 ml sour cream
- • 250 g cream cheese, softened
- • 300 g frozen spinach, thawed and drained
- • 4 item spring onions, finely chopped
- • 200 g bacon, cooked and crumbled
- • 60 ml mayonnaise
- • 40 g dried vegetable soup mix
- • 2 cloves garlic
- • 100 g grated cheddar cheese
Instructions

Preheat oven to 180°C (350°F).

Cut the top off the cob loaf and hollow out the inside, leaving a 2cm thick shell. Reserve the bread pieces for dipping.

In a large bowl, combine softened cream cheese, sour cream, and mayonnaise until smooth.

Squeeze excess water from the thawed spinach and add to the mixture.

Stir in the dried soup mix, minced garlic, chopped spring onions, crumbled bacon, and half of the grated cheese.

Mix thoroughly until all ingredients are well combined.

Spoon the mixture into the hollowed-out cob loaf and top with remaining cheese.

Place on a baking tray along with the reserved bread pieces.

Bake for 20-25 minutes until the dip is hot and bubbly, and the cheese on top is golden.

Serve immediately with the toasted bread pieces, crackers, or fresh vegetables for dipping.
