Ingredients

  • 30 g Cajun seasoning
  • 30 ml olive oil
  • 300 g romaine lettuce, chopped
  • 200 g cherry tomatoes, halved
  • 150 g red bell pepper, diced
  • 150 g corn kernels
  • 60 g red onion, thinly sliced
  • 200 g avocado, diced
  • 60 ml mayonnaise
  • 60 ml sour cream
  • 30 ml lemon juice
  • 2 cloves garlic, minced
  • 15 ml hot sauce
  • 1 sprinkle salt to taste
  • 1 sprinkle black pepper to taste

Instructions

    Pat chicken breasts dry and coat thoroughly with Cajun seasoning on both sides.

    Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C).

    Remove chicken from heat and let rest for 5 minutes, then slice into thin strips.

    In a small bowl, whisk together mayonnaise, sour cream, lemon juice, minced garlic, and hot sauce to create the dressing.
