Prepare the pickled vegetables: Julienne the daikon and carrot into thin matchsticks. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Add the vegetables and let pickle for at least 30 minutes.

Prepare the marinade: Mince garlic and finely chop lemongrass. Mix with soy sauce, fish sauce, and a pinch of black pepper.

Slice the pork tenderloin into thin cutlets (about 1/4 inch thick) and marinate in the mixture for 15 minutes.

Heat vegetable oil in a pan over medium-high heat. Cook the pork cutlets for 2-3 minutes per side until golden brown and cooked through.

Slice the baguettes lengthwise, leaving one edge intact to create a hinge. Toast lightly if desired.

Spread mayonnaise on one side of the bread and pâté on the other (if using).

Layer the cooked pork in the sandwich. Drain the pickled vegetables and add a generous amount.
