Pastrami Reuben with Dijon Butter

Preheat a griddle or large skillet over medium heat.

In a small bowl, mix the softened butter with Dijon mustard until well combined.

Spread the Dijon butter mixture on one side of each bread slice.

Place bread Dijon butter-side down on a clean surface.

Spread Russian dressing on the unbuttered side of each bread slice.

Layer one slice of Swiss cheese on two of the bread slices (dressing side up).

Divide the pastrami evenly between the two sandwiches, placing it on top of the cheese.

Top the pastrami with sauerkraut, dividing it evenly between sandwiches.

Place the remaining Swiss cheese slices on top of the sauerkraut.

Close the sandwiches with the remaining bread slices, dressing side down, Dijon butter side up.

Place sandwiches on the hot griddle and cook for 3-4 minutes until golden brown.

Carefully flip and cook the other side for 3-4 minutes until golden brown and cheese is melted.

Remove from heat, let rest for 1 minute, then cut diagonally and serve immediately.
