Traditional Irish Soda Bread

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, baking soda, and salt until well combined.

Make a well in the center of the dry ingredients and pour in the buttermilk.

Using a wooden spoon or your hands, mix the ingredients together quickly until a shaggy dough forms. Do not overmix - the dough should be slightly sticky and rough.

Turn the dough out onto a lightly floured surface and gently shape it into a round loaf about 2 inches thick. Work quickly and handle the dough as little as possible.

Place the loaf on the prepared baking sheet. Using a sharp knife, cut a deep cross (about 1 inch deep) across the top of the loaf, extending almost to the edges.

Bake for 15 minutes at 425°F, then reduce the temperature to 400°F (200°C) and continue baking for 30 minutes more, until the bread is golden brown and sounds hollow when tapped on the bottom.

Transfer to a wire rack and cover with a clean kitchen towel to keep the crust soft. Allow to cool for at least 15 minutes before slicing.

Serve warm with butter, or store wrapped in a kitchen towel for up to 2 days.

"The key to authentic Irish soda bread is speed and a light touch - overmixing will make it tough. The cross on top isn't just traditional, it helps the heat penetrate the dense dough and, as legend says, lets the fairies out! Best enjoyed fresh from the oven with salted Irish butter."
