Savory Black Bean & Quinoa Burger Patties
Ingredients

- • 185 g quinoa (cooked)
- • 60 g breadcrumbs
- • 80 g red onion (finely diced)
- • 2 cloves garlic
- • 1 item egg
- • 5 ml smoked paprika
- • 5 ml ground cumin
- • 15 ml soy sauce
- • 30 ml olive oil
- • 1 sprinkle salt to taste
- • 1 sprinkle black pepper to taste

Drain and rinse the black beans, then mash about 3/4 of them in a large bowl, leaving some whole for texture.

Add the cooked quinoa, breadcrumbs, diced red onion, and minced garlic to the bowl.

Beat the egg and add it to the mixture along with smoked paprika, cumin, soy sauce, salt, and pepper.

Mix all ingredients thoroughly until well combined. The mixture should hold together when pressed.

If the mixture is too wet, add more breadcrumbs; if too dry, add a tablespoon of water.

Refrigerate the mixture for 15 minutes to help it firm up.

Divide the mixture into 4 equal portions and shape each into a patty about 3/4 inch thick.

Heat olive oil in a large skillet over medium heat.

Cook the patties for 4-5 minutes on each side until golden brown and crispy on the outside.
