Instructions

    Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

    Mince the garlic cloves finely.

    In a large bowl, combine the sausage meat, diced onion, minced garlic, breadcrumbs, and chopped sage. Season with salt and pepper, mixing thoroughly with your hands.

    Roll out the puff pastry on a lightly floured surface into a large rectangle, about 3mm thick.

    Shape the sausage mixture into a long log along one long edge of the pastry, leaving about 2cm border.

    Brush the opposite edge with beaten egg, then roll the pastry tightly around the sausage meat, sealing the edge.

    Cut the roll into 4 equal pieces using a sharp knife. Place them seam-side down on the baking sheet.

    Brush the tops with beaten egg and score the pastry lightly with diagonal cuts.

    Bake for 25 minutes until the pastry is golden brown and the sausage is cooked through.

    Allow to cool slightly on a wire rack before serving warm or at room temperature.
