Mediterranean Lamb Kofta with Yogurt Sauce
Instructions
- 1
In a large bowl, combine ground lamb, minced onion, parsley, mint, minced garlic, cumin, coriander, paprika, cinnamon, cayenne, salt, and black pepper. Mix thoroughly with your hands until well combined.
- 2
Cover the mixture and refrigerate for at least 30 minutes to allow flavors to meld.
- 3
Meanwhile, prepare the yogurt sauce by combining Greek yogurt, diced cucumber, half the lemon juice, and a pinch of salt in a bowl. Mix well and refrigerate.
- 4
Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 15 minutes.
- 5
Take about 2 tablespoons of the meat mixture and form it into an elongated sausage shape around a skewer, pressing firmly. Repeat with remaining mixture to make about 12-16 koftas.
- 6
Brush the koftas lightly with olive oil on all sides.
- 7
Grill the koftas for 3-4 minutes per side, turning carefully to ensure even cooking. They should be nicely charred on the outside and cooked through.
- 8
Remove from heat and let rest for 2-3 minutes. Drizzle with remaining lemon juice.
- 9
Serve hot with the yogurt sauce, pita bread, and a fresh salad if desired.
