Instructions

    Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper or lightly grease a loaf pan.

    In a small bowl, combine breadcrumbs and milk. Let soak for 5 minutes until the breadcrumbs absorb the liquid.

    In a large mixing bowl, combine ground beef, soaked breadcrumbs, egg, chopped onion, minced garlic, 60ml ketchup, Worcestershire sauce, thyme, salt, and black pepper.

    Mix gently with your hands or a wooden spoon until just combined. Be careful not to overmix, as this will make the meatloaf dense.

    Shape the mixture into a loaf shape on the prepared baking sheet, or press into the loaf pan.

    In a small bowl, mix together the remaining 60ml ketchup, brown sugar, and mustard to create the glaze.

    Spread half of the glaze over the top of the meatloaf.

    Bake for 45 minutes, then remove and spread the remaining glaze on top.

    Continue baking for another 15 minutes, or until the internal temperature reaches 71°C (160°F).

    Let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute for easier slicing.
