Homemade Dinner Rolls
Ingredients
- • 240 ml warm milk
- • 7 g active dry yeast
- • 50 g granulated sugar
- • 60 g unsalted butter, melted
- • 2 item eggs
- • 6 g salt
- • 480 g all-purpose flour
- • 30 g unsalted butter, melted for brushing
Instructions
- 1
In a large mixing bowl, combine warm milk (110°F/43°C), yeast, and 1 tablespoon of the sugar. Let stand for 5-10 minutes until foamy and activated.
- 2
Add the remaining sugar, melted butter, eggs, and salt to the yeast mixture. Whisk until well combined.
- 3
Gradually add flour, one cup at a time, mixing with a wooden spoon or stand mixer with dough hook attachment until a soft dough forms.
- 4
Turn dough onto a lightly floured surface and knead for 8-10 minutes by hand (or 5-6 minutes in stand mixer) until smooth and elastic. The dough should be slightly tacky but not sticky.
- 5
Place dough in a greased bowl, turning once to coat. Cover with a clean kitchen towel or plastic wrap and let rise in a warm place for 60-90 minutes, or until doubled in size.
- 6
Punch down the dough and turn out onto a lightly floured surface. Divide into 12 equal pieces (about 75g each for uniform rolls).
- 7
Shape each piece into a smooth ball by tucking the edges underneath and rolling between your palms. Place rolls in a greased 9x13 inch baking pan, spacing them evenly.
- 8
Cover and let rise for another 30-45 minutes until puffy and nearly doubled.
- 9
Preheat oven to 375°F (190°C) during the last 15 minutes of rising.
- 10
Bake for 16-18 minutes until golden brown on top and the internal temperature reaches 190°F (88°C).
- 11
Remove from oven and immediately brush the tops with melted butter for a glossy, soft finish.
- 12
Let cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature.

Chef's Note
"The key to perfectly soft dinner rolls is not over-flouring the dough - it should feel slightly tacky to the touch. If your kitchen is cold, create a warm rising environment by turning your oven to the lowest setting for 1 minute, then turning it off and placing the covered bowl inside. These rolls freeze beautifully for up to 3 months - just reheat in a 300°F oven for 10 minutes."
