Herb-Crusted Gremolata Chicken

- • 30 g fresh parsley
- • 2 tbsp lemon zest
- • 4 cloves garlic
- • 60 ml olive oil
- • 50 g breadcrumbs
- • 30 g parmesan cheese
- • 1 tsp salt
- • 0.5 tsp black pepper

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Pound chicken breasts to even thickness (about 3/4 inch) between plastic wrap.

Finely chop parsley leaves and mince garlic cloves. Combine with lemon zest in a bowl to make the gremolata.

Mix breadcrumbs and grated parmesan in a separate shallow dish.

Season chicken breasts with salt and pepper on both sides.

Brush each chicken breast with 1 tablespoon olive oil, then press gremolata mixture firmly onto the top of each piece.
