Gluten-Free Curried Sausages
Ingredients
- • 500 g gluten-free sausages
- • 30 ml olive oil
- • 1 medium onion, diced
- • 3 cloves garlic
- • 15 g curry powder
- • 2.5 g ground turmeric
- • 400 ml coconut milk
- • 250 ml gluten-free chicken stock
- • 30 g tomato paste
- • 1 large bell pepper, sliced
- • 100 g frozen peas
- • 1 sprinkle salt to taste
- • 1 sprinkle black pepper to taste
- • 15 g fresh cilantro for garnish

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Brown the sausages on all sides, about 5-6 minutes total. Remove and set aside.

In the same pan, add remaining oil and sauté the diced onion until softened, about 3-4 minutes.

Add minced garlic, curry powder, and turmeric. Cook for 1 minute until fragrant, stirring constantly to prevent burning.

Stir in tomato paste and cook for another minute.

Pour in coconut milk and chicken stock, stirring well to combine all the curry flavors.

Add the bell pepper slices and bring the mixture to a gentle simmer.

Slice the sausages into thick rounds and return them to the pan along with any juices.

Simmer uncovered for 10-12 minutes until the sauce has thickened slightly and the peppers are tender.

Add frozen peas in the last 3 minutes of cooking.

Garnish with fresh cilantro and serve hot over rice or with gluten-free naan bread.
