Creamy Smoked Salmon Pasta

Instructions

  1. 1

Bring a large pot of salted water to boil and cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water before draining.

  2. 2

While pasta cooks, tear the smoked salmon into bite-sized pieces and set aside.

  3. 3

In a large skillet over medium heat, melt butter and add minced garlic. Sauté for 30 seconds until fragrant.

  4. 4

Add white wine to the pan and let it reduce for 1 minute.

  5. 5

Pour in heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.

  6. 6

Add lemon juice, capers, and half of the fresh dill. Stir to combine.

  7. 7

Add the drained pasta to the cream sauce and toss well. If sauce is too thick, add reserved pasta water a little at a time.

  8. 8

Remove from heat and gently fold in the smoked salmon pieces and parmesan cheese.

  9. 9

Season with salt and pepper to taste, remembering that smoked salmon and capers are already salty.

  10. 10

Serve immediately, garnished with remaining fresh dill and extra parmesan if desired.
