Beef Satay Stir-Fry with Mashed Potatoes and Green Beans
Ingredients
- • 600 g beef sirloin, sliced thin
- • 60 g peanut butter
- • 60 ml soy sauce
- • 30 ml lime juice
- • 30 g brown sugar
- • 4 cloves garlic
- • 15 g ginger, fresh grated
- • 2 g red pepper flakes
- • 30 ml vegetable oil
- • 1 kg potatoes
- • 60 g butter
- • 120 ml milk
- • 400 g green beans, trimmed
- • 1 item onion, sliced
- • 1 item red bell pepper, sliced
- • 1 sprinkle salt to taste
- • 1 sprinkle black pepper to taste

Peel and cut potatoes into chunks. Place in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.

While potatoes cook, prepare the satay sauce by whisking together peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and red pepper flakes in a bowl.

Slice beef thinly against the grain and toss with half of the satay sauce. Let marinate for 10 minutes.

Blanch green beans in boiling water for 3-4 minutes until tender-crisp. Drain and set aside.

Heat vegetable oil in a large wok or skillet over high heat. Add marinated beef and stir-fry for 2-3 minutes until browned.

Add onion and bell pepper to the wok and stir-fry for 2 minutes until slightly softened.

Add blanched green beans and remaining satay sauce. Stir-fry for another 2 minutes until everything is well coated and heated through.

Drain potatoes and mash with butter and milk. Season with salt and pepper to taste.

Serve the beef satay stir-fry over a bed of creamy mashed potatoes.
