Instructions

    Place bacon strips in a cold skillet and turn heat to medium. This allows the fat to render slowly for crispier bacon.

    Cook bacon for 4-5 minutes on the first side, then flip and cook for 3-4 minutes on the second side until crispy.

    Transfer bacon to a paper towel-lined plate and pour off all but 1 tablespoon of bacon fat from the pan.

    Add butter to the pan with the reserved bacon fat and let it melt over medium-low heat.

    Crack eggs directly into the pan, being careful not to break the yolks.

    Season eggs with salt and pepper to taste.

    For sunny-side up: Cook without flipping for 3-4 minutes until whites are set but yolks are still runny.

    For over-easy: Cook for 2-3 minutes, then carefully flip and cook for 30 seconds more.
