Smoky Chipotle Sauce

Ingredients

  • 240 ml mayonnaise
  • 60 g chipotle peppers in adobo sauce
  • 30 ml adobo sauce from can
  • 15 ml fresh lime juice
  • 2 cloves garlic
  • 15 ml honey
  • 2.5 ml smoked paprika
  • 1.25 ml ground cumin
  • 1 sprinkle salt to taste

Instructions

    Finely mince the garlic cloves and set aside.

    Remove 3-4 chipotle peppers from the can and finely chop them. Reserve the adobo sauce.

    In a medium bowl, combine the mayonnaise, chopped chipotle peppers, and adobo sauce.

    Add the minced garlic, lime juice, honey, smoked paprika, and ground cumin to the bowl.

    Whisk all ingredients together until smooth and well combined.

    Taste and adjust seasoning with salt as needed. For more heat, add additional adobo sauce.

    Transfer to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld.
