Glazed Honey Carrots

Peel the carrots and cut them diagonally into 1/2-inch thick slices for even cooking

Bring a large pot of salted water to a boil and add the carrot slices

Cook the carrots for 8-10 minutes until they are tender but still have a slight bite

Drain the carrots thoroughly in a colander

In the same pot, melt the butter over medium heat

Add the honey to the melted butter and stir to combine

Return the drained carrots to the pot with the honey-butter mixture

Toss the carrots gently to coat them evenly with the glaze

Cook for 3-4 minutes, stirring occasionally, until the glaze thickens and coats the carrots

Add fresh thyme leaves and season with salt and pepper to taste
