Ingredients

- • 5 ml salt
- • 1 sprinkle black pepper to taste

If using fresh corn on the cob, cut kernels off the cob using a sharp knife. For frozen corn, thaw completely and pat dry.

In a large mixing bowl, combine the corn kernels, diced tomatoes, red onion, minced jalapeño, and chopped cilantro.

In a small bowl, whisk together lime juice, olive oil, minced garlic, ground cumin, and salt.

Pour the lime dressing over the corn mixture and toss thoroughly to combine.
