Caesar Dressing

Instructions

  1. 1

Mince the garlic cloves and anchovy fillets together into a fine paste using the side of your knife

  2. 2

In a medium bowl, whisk together the egg yolks, garlic-anchovy paste, lemon juice, dijon mustard, and worcestershire sauce until well combined

  3. 3

While whisking continuously, slowly drizzle in the olive oil in a thin, steady stream to create an emulsion - the dressing should thicken like mayonnaise

  4. 4

Once all oil is incorporated and the dressing is thick and creamy, fold in the grated parmesan cheese

  5. 5

Season with salt and freshly cracked black pepper to taste

  6. 6

Transfer to an airtight container and refrigerate for at least 30 minutes before using to allow flavors to meld

  7. 7

Store in the refrigerator for up to 5 days and whisk before each use...

Chef's Note

"This homemade Caesar dressing transforms any salad into something extraordinary - once you taste the bright, garlicky richness of fresh-made dressing, you'll never go back to bottled. Don't be intimidated by the anchovies; they simply add that signature savory depth that makes Caesar irresistible."
