Caesar Dressing
Ingredients
- • 2 item egg yolks
- • 2 cloves garlic
- • 4 item anchovy fillets
- • 45 ml lemon juice
- • 5 ml dijon mustard
- • 10 ml worcestershire sauce
- • 180 ml olive oil
- • 50 g parmesan cheese, grated
- • 1 sprinkle salt to taste
- • 1 sprinkle black pepper to taste
Instructions

Mince the garlic cloves and anchovy fillets together into a fine paste using the side of your knife

In a medium bowl, whisk together the egg yolks, garlic-anchovy paste, lemon juice, dijon mustard, and worcestershire sauce until well combined

While whisking continuously, slowly drizzle in the olive oil in a thin, steady stream to create an emulsion - the dressing should thicken like mayonnaise

Once all oil is incorporated and the dressing is thick and creamy, fold in the grated parmesan cheese

Season with salt and freshly cracked black pepper to taste

Transfer to an airtight container and refrigerate for at least 30 minutes before using to allow flavors to meld
