Instructions

    Prepare the rice noodles according to package instructions, drain and set aside

    Heat oil in a large pot over medium heat and fry the laksa paste for 2-3 minutes until fragrant

    Add bruised lemongrass stalks and torn kaffir lime leaves, stir for 1 minute

    Pour in the chicken stock and bring to a gentle simmer

    Add coconut milk, fish sauce, and palm sugar, stirring to combine

    Slice chicken breast thinly and add to the pot, simmer for 5 minutes

    Add prawns and cook for 3-4 minutes until pink and cooked through

    Add tofu puffs and simmer for another 2 minutes

    Taste and adjust seasoning with more fish sauce or sugar if needed
